Shredded Chicken Burritos (in the Crock Pot)

This meal comes together almost like magic because the chicken is prepared in the crock pot!

As a busy wife, mom, blogger, and DIYer who works part time, it's a great day when I serve my family a nutritious, delicious meal. I consider these easy chicken burritos a total win!

I created this recipe out of desperation one day...and it's been a favorite ever since! It even uses frozen chicken...you dump it all into the crock pot in the morning...and have a tasty meal with minimal prep at dinner.

Crock Pot Chicken Burrito Ingredients:

 *Note: if all you have is a packet of Taco Seasoning, that will work just fine
  • about 1 cup of chicken broth
  • Optional: half a 14 oz jar/can of salsa verde or green enchilada sauce (if I have it in the house I'll use it; if I don't, then I leave it out).

This recipe is very flexible as you can see! Try it out a few different ways to see which one your family prefers. Or simply use what you have in the house.

How to make easy crock pot burrito chicken

Add your frozen chicken breasts in the crock pot and shake seasonings over top. Don't worry about your chicken being in one big clump! It will separate as it slow cooks.

It will look just like this...a big lump of frozen chicken with spices on top!

Pour the chicken broth and salsa verde or enchilada sauce (if using) on top.

Put the lid on your crock pot and let the chicken cook on HIGH for about 8 hours. If you know you'll be gone longer than that, use LOW heat.

The smell will make your mouth water and your tummy growl, guaranteed!!

When the chicken literally falls apart when you poke a fork in it, it is done; shred it with 2 forks and mix it well with the juices.

Turn heat on crock pot to 'Warm' and get the rest of your meal together.

Additional Ingredients

I like to use chopped parsley or cilantro, lime wedges, avocado, shredded cheese, sour cream and salsa as garnishes. We've also served these with a side of beans (either refried, black or pinto).

Here's a quick way to prepare your tortillas...

Turn burner to High and let pan heat up.

Add a tortilla and flip with tongs from side to side until hot and slightly puffed 
(takes just a minute so have plates at the ready). You could also wrap in tin foil and keep warm in a low oven.

Set up a burrito station

You have to heat the tortillas one by one, but if you have a 'burrito station' set up with cheese, salsa, avocado and other toppings, you can pass a plated tortilla off and continuing heating while everyone fixes their burrito the way they like it!

  2. We had chicken enchiladas tonight for dinner - I too could eat Mexican food every day. Good stuff. My husband texted me this afternoon and offered to make his special recipe. Now that wasn't a hard one to say, "Yes!" to. Remember the Beefy Tostatas Taco bell used to sell? Those are one of our faves. We get the hard shell flat tostada shell at Aldis when they have them. Easy and so good!
