Salt Dough Jack-o-Lantern Sandwich Cookies

What else can I make with salt dough?

Salt dough ornaments make wonderful decorations for every season! Here are some of my past salt dough DIY's:
I've seen these faux pumpkin cookies for sale online. They're pricey, and I've been wanting to make my own for a couple years. This year I finally did it, and I am breaking down all the steps for you so you can make your own pumpkin jack-o-lantern cookies too!

There are several steps to making these cookies. It's not complicated, but I wanted to share everything I did so that you can have success making these cookie decorations too! Feel free to scroll down to the section you need.

Ingredients for salt dough:

1-1/4 cups all purpose flour
1 cup table salt
1 heaping tsp cinnamon
1/2 tsp pumpkin pie spice
1 Tbsp instant coffee crystals
3/4 cup water

Tools:

*keep in mind that your cookies won't have a solid back if you use the cutter with face cut-out unless you're able to find a pumpkin cutter the same size

Step 1 - Make the Dough

You'll mix the ingredients together just like regular cookies. Mix all dry ingredients together before adding water. Mix until it forms a ball, then dump onto surface and knead until it comes together into a smooth ball.

Note: this dough is very forgiving. If it seems too wet when mixing (and won't come together), add a little more flour. Conversely, if it's too dry, add a little water.

Step 2 - Roll out Cookies

Be generous with flouring your surfaces to keep the dough from sticking. Roll out dough about 1/8" thick and cut pumpkin shapes with a cookie cutter (I used this 4" pumpkin cutter).

Step 3 - Cut out Faces

Each cookie will take a solid bottom and a top with a jack-o-lantern face. I used a sharp paring knife to cut out the face. If this is too difficult for you, you can use the jack-o-lantern face cookie cutter I linked in supplies.

Step 4 - Paint Faux Icing

Mix together a pumpkin colored acrylic paint (I used THIS color) with about a Tablespoon of baking powder to make a fluffy thick paint. Paint the solid cookies just on the inside with a generous topping of the paint. This mimics frosting inside the faux cookies.

Step 5 - Make Cookie Sandwiches

Carefully place the jack-o-lantern face cookie on top of the painted one. Press edges a little. Use a fork to press and seal the edges and create texture around the entire shape.

Step 6 - Bake Cookies

Put cookies in a 200° oven for 1 hour. Flip cookies over and continue to bake for an additional 30-60 minutes to dry out the dough. Remove from oven to cool.

FYI, I didn't have an issue with paint melting and dripping out. 

Step 7 - Glaze Cookies

You will notice as the cookies cool that the salt will rise to the surface and make the dough look very dried out and unappealing. We're going to correct that with a glaze that will give the cookies authentic baked color, as well as seal the dough. You can see below what the cookies look like out of the oven, and how the glaze gives them an realistic baked appearance.

Mix the following together:
*the amount of coffee you use will affect the darkness of the glaze, I made two different shades.

Use a small paint brush to work the glaze into all the nooks and crannies to give your faux pumpkin cookies true baked appeal. Don't forget to brush the painted faux frosting with glaze as well.
