Fresh Strawberry Pie (The Taste of Summer)
One of my favorite things about summer is eating fresh fruit! Summer desserts like this strawberry pie are the perfect opportunity to use up an abundance of fresh, ripe fruit. My strawberry pie is made with a combination of halved and mashed strawberries. Try it and see what you think!

INGREDIENTS FOR STRAWBERRY PIE
- 1 baked pie crust, cooled
- 2 16-oz packages fresh strawberries
- 2/3 cup sugar, divided
- 4-5 Tbsp instant ClearJel thickener
- 2-3 drops red food coloring, optional
- whip topping
HOW TO MAKE A FRESH STRAWBERRY PIE
In a bowl, mash 1 cup strawberries with fork or pastry blender; sprinkle with 1/3 cup sugar and let sit for 15-20 minutes for juices to collect.
Halve remaining berries and arrange in pie shell, cut sides down.
Mix 4-5 Tbsp instant ClearJel with remaining sugar and add to mashed berries. The instant kind doesn't need to be cooked; if you use the regular ClearJel, you will need to cook the berries a little bit. If you've never used ClearJel before, here is a helpful guide. It's better than both flour and cornstarch because it thickens more consistently and it doesn't cloud the filling or leave a starchy taste.
Pour mashed strawberry mixture over berries in pie shell.
Top with additional berries and put in fridge to set.
Serve with whip cream.

I love this strawberry pie!! I’d tried a different kind before, but it was lacking, so now my hubby and I both really liked this one. I made it with brown sugar instead of white and cut back a little bit and it tasted great for ppl who are used to less sugar. :)
