Fresh Strawberry Pie (The Taste of Summer)

It's berry season and that means abundant, ripe strawberries! This simple pie is a great way to use up your berries and make a dessert fit for company but easy enough for weeknights!

Summer is berry season and we enjoy all the ways to eat fresh, ripe berries! This pie, made with fresh strawberries, is Mr DIY's absolute favorite! He has been known to bring home all the ingredients so I'll make him a pie 😋 I hope you try it and love it as much as we do!

Fresh Strawberry Pie

This pie is so easy, you can whip it up in no time! A wonderful way to use all those ripe strawberries. Use any pie crust you prefer. A graham cracker crust, pastry crust, or even an Oreo cookie crust for chocolate lovers!

Ingredients

  • 1 baked pie crust, cooled
  • 2 16-oz packages fresh strawberries
  • 2/3 cup sugar, divided
  • 4-5 Tbsp instant ClearJel thickener
  • 2-3 drops red food coloring, optional
  • whip topping

Directions

In a bowl, mash 1 cup strawberries with fork or pastry blender; sprinkle with 1/3 cup sugar and let sit for 15-20 minutes for juices to collect.

Halve remaining berries and arrange in pie shell, cut sides down.

Mix 4-5 Tbsp instant ClearJel with remaining sugar and add to mashed berries. The instant kind doesn't need to be cooked; if you use the regular ClearJel, you will need to cook the berries a little bit. If you've never used ClearJel before, here is a helpful guide. It's better than both flour and cornstarch because it thickens more consistently and it doesn't cloud the filling or leave a starchy taste.

Pour mashed strawberry mixture over berries in pie shell.

Top with additional berries and put in fridge to set.

Serve with fresh whipped cream.

  1. I love this strawberry pie!! I’d tried a different kind before, but it was lacking, so now my hubby and I both really liked this one. I made it with brown sugar instead of white and cut back a little bit and it tasted great for ppl who are used to less sugar. :)
