Winter Stew Loaded with Ground Beef and Winter Veggies

What says comfort food better than a bowl of homemade stew? This one is a little different because it's made with ground beef and lots of fresh winter veggies! You're going to love this recipe!

My mom was known far and wide for her creativity in the kitchen! She made up her own recipes all the time, and they were good! Plate licking good!

Most of her recipes were in her head, not written down. When I was a young mom and she got sick, I spent a lot of time with her, recreating her recipes and writing down the directions so my brothers and I would be able to share them with our kids after she passed away.

Comforting, hearty stew is the perfect meal for a cold and wintry night in Texas! It's almost like a hug from mom 💗

Just a little update on our crazy Texas weather. We are finally seeing temperatures warm up after almost a week of below freezing temps. We were hoping for snow, but we're too close to the Gulf. We did get a lot of ice...freezing rain...icicles...and our power was out for 24 hours! So thankful our gas fireplace was working because it kept us warm! And I was able to boil water and make grilled cheese sandwiches by candlelight on my gas cooktop.

At the time I'm typing this (Friday), most of our restaurants and stores are still closed because of power outages and the water issue. Hopefully that will all change next week and we'll be back to normal!

Back to my mom's stew recipe. It's easy and it's adaptable meaning if you don't have some of the veggies just sub them out for what you do have! I remember my mom making this recipe when it was time to clean out the fridge! The winter veggies included in this beef stew are hearty and ones that last awhile in the fridge!

I made some French bread in my bread machine to go along with the stew, and my kids keep checking it! I know they can't wait to dig in!

Winter Beef Stew with Veggies

Ingredients:

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 1-2 garlic cloves, minced
  • 1-2 celery sticks, diced
  • 1/3 cup canned diced tomatoes with juice
  • 2 cups beef broth (or beef bouillon cubes dissolved in 2 cups water), divided
  • 2-3 diced carrots
  • 3-4 diced small potatoes
  • 1 cup chopped broccoli and/or cauliflower
  • 2 tsp flour
  • salt, pepper to taste
  • pinch of cayenne (ground red pepper)

Note: you can easily double or triple this recipe for a larger crowd!

I also like to prep all my veggies beforehand, so they're all ready to throw into the stew! I can't say enough about having a good sharp chef's knife to quickly chop all those veggies! This is the knife that I'm using, from Misen.

Directions:

Brown ground beef with onions, celery and garlic, then scoop out grease

Add tomatoes and 1-3/4 cup of beef broth

Add carrots and potatoes to stew mixture as well as seasonings

Turn heat up to a boil, then reduce and simmer with lid on for 1/2 hour

Add broccoli and/or cauliflower if using and continue to simmer (with lid on) another 10-15 minutes or until veggies are tender.

To thicken stew, mix remaining 1/4 hot broth (heat for 20 seconds in microwave) with flour and whisk until smooth. Stir into stew and let cook for about 5 minutes.

Note: if you try to do this with cold broth, you won't have success whisking the lumps smooth!

Serve with crusty bread.

Makes 4-6 servings


This is one of those stews that you can rush if you need to, or you can take a little longer with it and really get those veggies soft! It's totally up to you!

    I am glad to hear that you have a gas stove and fireplace. You Texans are facing a long uphill battle. Waiting to hear back from my Pastor/friend to see if our conference has a fund going for helping out because my husband and I would like to help. In the meantime, you are all in our prayers. My Aunt and Uncle are in Arlington and have power but one of their daughters lives close and she is out.
